About the Recipe

How many of you love Jamaican food? If so, you’re in for a treat! This creamy, spicy Rasta Pasta is bursting with Caribbean flavors, vibrant colors, and just the right amount of kick. It’s easy to make, and perfect for date night or any time you want a meal that impresses. Let’s get cooking!

Ingredients

  • Main Ingredients

    - Chicken breast (or your favorite cut), cubed

    - 2-3 bell peppers (red, yellow, green), sliced

    - 12 oz pasta (penne works perfectly)

    Seasonings 

    - Jerk seasoning (homemade or store-bought for ease)

    - Onion powder, garlic powder, paprika, and chili powder

    The Sauce

    - 1 cup heavy cream

    - 1/2 cup chicken stock (or vegetable stock)

    - 1/2 cup freshly grated Parmesan

    - Optional Garnishes: Fresh parsley, a pinch of cayenne pepper for extra heat

Instructions

1. Cook the Pasta:  

In a large pot, bring water to a boil, add a pinch of salt, and cook the pasta until it’s al dente—usually about 12-14 minutes. Drain and set aside.


2. Season the Chicken:  

Cut your chicken breast into bite-sized chunks, then season generously with onion powder, garlic powder, paprika, chili powder, and 2 spoonfuls of jerk seasoning. This will give the chicken a flavorful, smoky kick.


3. Sauté the Chicken:  

Heat a skillet over medium heat, add butter or olive oil, and once hot, add the chicken. Cook until the chicken is golden brown and cooked through. Set aside in a bowl for later, but leave any flavorful bits and juices in the skillet.


4. Cook the Peppers:  

In the same skillet, add the bell peppers. Sauté them until they’re tender-crisp with a bit of char—this adds color and a slight sweetness that balances the jerk spices.


5. Make the Sauce:  

Keep that same skillet with all its flavors. Pour in the heavy cream and chicken stock, and add a spoonful of jerk seasoning. Let it simmer for a few minutes, stirring occasionally until the sauce thickens and is infused with the spicy, smoky flavor. Add Parmesan, stirring until it melts into the sauce, creating a rich, creamy texture.


6. Combine Everything:  

Return the cooked chicken and pasta to the skillet, and toss everything together until every bite is coated in the creamy, spicy sauce. Add the sautéed bell peppers, giving the pasta that signature “razzle dazzle.”


7. Garnish and Serve:  

Sprinkle with fresh parsley for a pop of color, and a dash of cayenne if you want extra heat. Serve hot, and get ready to savor every bite!


Serving Suggestion:  

Serve Rasta Pasta with a side of plantains or garlic bread to complete the experience. This dish is bursting with flavor and will have everyone asking for seconds!
