About the Recipe

A vibrant and tropical dish served inside a fresh pineapple, combining savory proteins with a burst of sweet, tangy flavors. Perfect for a quick, impressive meal!

Ingredients

For the Bowl Base:

  • 1 large ripe pineapple (halved lengthwise and cored; keep the halves intact for serving)

  • 1 ½ cups cooked jasmine rice (warm and fluffy)

For the Protein & Veggie Mix:

  • 1 lb boneless chicken breast or shrimp, cleaned and deveined

  • 1 tablespoon soy sauce

  • 1 tablespoon honey

  • 1 teaspoon smoked paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon ground ginger

  • 2 tablespoons olive oil or sesame oil

For the Vegetables:

  • ½ red bell pepper, diced

  • ½ yellow bell pepper, diced

  • ½ cup snap peas, halved

  • ¼ cup shredded carrots

  • 2 tablespoons green onions, chopped (plus extra for garnish)

For the Sauce:

  • 2 tablespoons low-sodium soy sauce

  • 1 tablespoon hoisin sauce

  • 1 tablespoon sweet chili sauce

  • ½ teaspoon sesame oil

  • Juice of half a lime

Optional Garnish:

  • Lime wedges

  • Fresh cilantro

  • Sesame seeds

Preparation

 Prep the Pineapple Bowl

  • Slice the pineapple lengthwise and carefully scoop out the core with a knife or spoon. Set aside the pineapple halves to use as serving bowls. (Save the excess pineapple for smoothies or juices!)


2. Cook the Protein

  • Season the chicken or shrimp with soy sauce, honey, smoked paprika, garlic powder, and ground ginger.

  • Heat oil in a large skillet over medium-high heat. Cook the protein for 5-7 minutes, until golden and fully cooked. Remove from the skillet and set aside.


3. Sauté the Vegetables

  • In the same skillet, add a bit more oil if needed. Toss in the bell peppers, snap peas, carrots, and green onions. Sauté for 3-4 minutes until they’re slightly tender but still crisp.


4. Mix the Sauce

  • In a small bowl, whisk together soy sauce, hoisin sauce, sweet chili sauce, sesame oil, and lime juice.


5. Combine It All

  • Return the protein to the skillet with the vegetables and pour in the sauce. Stir everything together until evenly coated. Let it simmer for 2 minutes to allow the flavors to meld.


6. Assemble the Pineapple Bowls

  • Divide the cooked rice evenly into the pineapple halves. Spoon the protein and veggie mix on top of the rice.


7. Garnish & Serve

  • Sprinkle with green onions, sesame seeds, and fresh cilantro. Add a lime wedge on the side for an extra zesty kick.
